Tahini Garden Salad

Ingredients:

  • Dressing

    • 2 tablespoons extra virgin olive oil

    • 1 tablespoon maple syrup

    • 1 teaspoon toasted sesame oil

    • 1 garlic clove, grated

    • Salt and pepper to taste 

  • Salad

    • 1 tablespoon butter

    • 1/4 cup panko breadcrumbs

    • 1 clove garlic, minced 

    • 1 bunch of green lettuce, roughly chopped

    • 1/2 ball of radicchio, roughly chopped 

    • 3 radishes, thinly sliced 

    • 1 small bulb of fennel, thinly sliced 

    • 1/2 cup red onion, thickly sliced 

    • 1/4 cup pepitas, toasted

Instructions:

  • Make the dressing. Whisk together the tahini, water, lemon juice, olive oil, maple syrup, sesame oil, and grated garlic until smooth. Season with salt and pepper, and thin with a little more water if it's thicker than you'd like.

  • Toast the breadcrumbs. Melt the butter in a skillet over medium heat. Add the panko and toast, stirring often, until golden. Add the minced garlic in the last minute of cooking, then remove from heat and season with salt.

  • Dress the greens. Dress the sturdier greens first, then layer on the more delicate toppings, so nothing wilts before serving. In a large bowl, toss the chopped lettuce and radicchio with the tahini dressing until well coated.

  • Assemble: Transfer everything to a serving platter. Top with the toasted pepitas, shaved fennel and the toasted garlic breadcrumbs just before serving.
