Lemonade Popsicles

  • 2 cups cold water

  • 1 tablespoon lemon zest 


Instructions:

  • In a large mixing bowl, combine the lemon juice and sugar. Use a fork to mix the lemon juice and sugar until the sugar is fully dissolved and forms a syrup, about 1-2 minutes. Make sure it fully dissolved before adding the water — undissolved sugar can sink and leave some pops less sweet than others.

  • Pour the water into the lemon syrup, then mix well. Add lemon zest and mix in well. Pour the mixture into popsicle molds. Leave a little room at the top of each mold — the liquid expands slightly as it freezes. Then place the molds into the freezer to set - at least 4 hours.

  • When ready to enjoy, run the outside of the molds under warm water for a few seconds to help release the popsicles cleanly.
