Magic Crispy Chicken
Why is it magic, do you ask? Because it has fewer than ten ingredients. It is coated in a luxurious bed of golden toasted panko that results in a satisfying crunch akin to something fried. And this is oil splatter free, and while I love art, there is no need for my backsplash to look like a Jackson Pollock painting. This beauty is baked in the oven and finished with a lovely tangy-sweet sauce and bright chives.
Why You'll Love This
Fewer than ten ingredients — Genuinely simple, without sacrificing flavor or texture.
All the crunch, none of the mess — Toasted panko delivers a fried-like crunch, with none of the cleanup a frying pan requires.
A tangy-sweet finish — The honey-mustard sauce and fresh chives take it over the top.
Key Ingredients
Egg yolk and mayonnaise — Together, they create a rich, clingy coating that helps the panko adhere to the chicken.
Dijon mustard — Used twice — in the coating and the sauce — for tangy depth throughout the dish.
Toasted panko breadcrumbs — Toasting them in oil before baking is the secret to that fried-like crunch.
Honey and cayenne — Balance sweet and heat in the finishing sauce.
Fresh chives — A bright, fresh finishing touch that cuts through the richness of the sauce.
Magic Crispy Chicken
Prep time: 20 minutes | Cook time: 20 minutes | Serves 4
Ingredients:
Chicken
1 large egg yolk
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
1½ pounds skinless, boneless chicken breasts
Kosher salt
Freshly cracked pepper
½ cup extra-virgin olive oil
2 cups panko breadcrumbs
½ teaspoon paprika
Sauce
¼ cup mayonnaise
¼ cup Dijon mustard
2 tablespoons honey
⅛ teaspoon cayenne pepper
Pinch of chili flakes
3 tablespoons chives, finely chopped
Freshly cracked pepper
Mustard Vinaigrette (optional, for serving)
1 tablespoon Dijon mustard
1½ tablespoons red wine vinegar or sherry vinegar
1 tablespoon fresh lemon juice
Salt and freshly ground pepper
½ cup extra-virgin olive oil
1 small garlic clove, grated
Instructions:
Panko
Heat the oil in a medium skillet over medium heat. Once hot, add the panko and paprika and cook, stirring constantly with a wooden spoon, until the crumbs are golden brown, about 5 minutes.
Remove from heat, season with salt, and let cool about 5 minutes.
Chicken
Position a rack in the center of the oven and preheat to 450°F.
Pat the chicken dry with paper towels. Set the chicken next to the panko and place a wire rack inside a rimmed baking sheet.
In a large bowl, whisk the egg yolk, mayonnaise, Dijon, salt, and several cranks of black pepper until smooth. Add the chicken to the bowl and turn the pieces several times with tongs until evenly coated.
Then place a piece of chicken in the panko mixture and pat all over with panko, pressing firmly to adhere. Lightly shake off excess and place on the rack. Repeat with the remaining chicken pieces, spacing them evenly apart on the rack. Discard any remaining panko.
Bake until the chicken is cooked through and the breadcrumbs are a deep golden brown, 15–20 minutes. Let cool slightly.
Sauce
Whisk the honey, cayenne, chili flakes, and the remaining ¼ cup mayonnaise and ¼ cup Dijon mustard in a small bowl. Season with black pepper. Stir in the chives and serve alongside the chicken.
Optional Side: Mustard Vinaigrette
Whisk together the Dijon, vinegar, lemon juice, salt, pepper, olive oil, and garlic until emulsified. Toss with whatever greens you have on hand and serve alongside the chicken.
Tips for Success
Pat the chicken completely dry before coating it — this helps the egg-mayo mixture adhere evenly.
Toast the panko until deeply golden before it goes on the chicken; it won't darken much further in the oven, so this step does most of the crunch work.
Press the panko firmly onto the chicken so it stays put through baking rather than flaking off.
Use a wire rack set inside a baking sheet so the chicken crisps on all sides instead of steaming on the bottom.
Whisk the sauce right before serving so the chives stay bright and fresh.
Ways to Serve It
As written, with the tangy-sweet sauce — Simple and satisfying on its own.
With a light side salad — Toss greens with the quick mustard vinaigrette for a complete meal.
Over rice or a grain bowl — A heartier way to round out the dish.
As leftovers, sliced over greens — The chicken holds its crunch well the next day, especially cold or at room temperature.
Storage
Store leftover chicken in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to help the panko coating stay crisp — the microwave will soften it. The sauce and vinaigrette both keep well in separate airtight containers in the refrigerator for up to a week.
Swaps and Substitutions
Chicken breasts: Boneless, skinless chicken thighs work well and stay extra juicy.
Mayonnaise: Full-fat Greek yogurt can be used in the coating for a tangier result.
Honey: Maple syrup makes a good substitute in the sauce.
Cayenne pepper: A dash of hot sauce can stand in if you don't have cayenne on hand.
Chives: Thinly sliced scallions work as a substitute.
