Caramelized Onion Toast
A recipe I happened upon accidentally. What originally started out as a caramelized onion dip turned into a tasty spread. The dip I intended to make came out far too thick to be considered a one but then a friend suggested I smear it on some bread and a lightbulb went off! I immediately lit the broiler smeared some of the “dip” on toast and topped with shredded gruyere, tossed on some chives and it is a true masterpiece. Might even be better than any dip.
RECIPE
Ingredients:
2 tablespoons unsalted butter
3 medium onions, halved and thinly sliced
2 tablespoons water
1 1/2 cups sour cream, at room temperature
8 ounces cream cheese, softened
1 tablespoon finely chopped flat-leaf parsley
1/2 teaspoon Worcestershire sauce
Salt and Pepper to taste
1/2 cup Gouda, shredded
Your choice of sliced bread
Chives, sliced
Instructions:
FOR CARAMELIZING THE ONIONS: In a large skillet, melt the butter. Add the onions and cook over medium heat, stirring occasionally, until golden, about 45-60 minutes. Add 2 tablespoons of water and cook, stirring, until the water has evaporated, about 3 minutes. Let the onions cool slightly, about 15 minutes.
FOR THE DIP: Transfer the onions to a cutting board and coarsely chop. In a large bowl, mix the sour cream with the cream cheese, parsley and Worcestershire sauce until smooth. Stir in the onions and season with salt and pepper.
ASSEMBLY: Turn on the broiler. Top your choice of bread with onion spread and sprinkle on a thin layer of gouda. Place under the broiler and cook until bubbly and golden brown. Once done, remove from the broiler and top with chives.
