Sourdough with Mascarpone, Prosciutto, and Dates

A no-recipe recipe I cannot get enough of. Simply toast up a hearty slice of sourdough or two. While that is toasting away, slice up some dates, tear a couple pieces of prosciutto, and take the mascarpone out of the fridge. Once the bread is ready, I like to grab a garlic clove and rub it over both sides of the bread. Then once slightly cooled (I don’t want the mascarpone to melt), I’ll add a nice layer of the mascarpone, layer it with thinly sliced prosciutto di Parma and my dates, and finish it with a healhy drizzle of good extra-virgin olive oil and flaky sea salt.
