Chili Crunch Cucumber Toast

Simple, quick and jam packed with flavor for breakfast, lunch or a snack. It’s versatile and easy to adjust the ingredients to the way you like best. I love the freshness from the lemon and cucumber and the spice and creaminess from the chilis and cream cheese spread.

Why You'll Love This

  • Ready in ten minutes — Quick marinating and toasting is all it takes.

  • Endlessly adjustable — Easy to scale the heat, tang, or creaminess to your own taste.

  • Works for any meal — Just as good for breakfast as it is for lunch or a snack.

Key Ingredients

  • Cucumber — Quick-marinated in lemon and vinegar so it has a bright, lightly pickled flavor before it even hits the toast.

  • Lemon juice, zest, vinegar, and sugar — Together, they make a fast marinade that balances tang and a little sweetness.

  • Cream cheese — The creamy, tangy base spread that holds everything together.

  • Chili crunch — Brings the spice and crunch that ties the whole thing together.

  • A good, sturdy bread — Toasted as the base that holds up to the cucumber and toppings.

Chili Crunch Cucumber Toast

Prep time: 10 minutes | Serves 1–2

Ingredients:

  • ½ a cucumber, thinly sliced

  • Juice and zest from half a lemon

  • White wine vinegar

  • Salt & Pepper to taste

  • Sugar

  • Chili Crunch

  • Cream Cheese

  • Your favorite bread

  • Extra virgin olive oil

Instructions:

  • This is one of my no-recipe recipes (a shout-out to one of my favorite recipe writers Sam Sifton). In a bowl toss the cucumber slices, lemon juice and zest, white wine vinegar, salt and pepper to taste and a good-sized pinch of sugar. Toss to combine and set aside to marinate for a few minutes. Throw a couple of slices of your favorite bread into the toaster. Once done to your desired toastiness, spread on a nice layer of cream cheese and line the marinated cucumber slices in rows. Top with chili crunch and a drizzle of extra-virgin olive oil.

Tips for Success

  • Let the cucumbers marinate for the full few minutes while the bread toasts — that's what gives them their bright, quick-pickled flavor.

  • Slice the cucumber thin and even so it lays nicely in rows and every bite gets some.

  • Soften the cream cheese slightly before spreading so it goes on smoothly without tearing the toast.

  • Adjust the ratios to your own taste — this one's meant to be loose and adaptable, exactly as intended.

  • Don't skip the finishing olive oil drizzle; it rounds out the heat from the chili crunch.

Ways to Serve It

  1. For breakfast — A fresh, satisfying way to start the day.

  2. For lunch — Light but flavorful on its own.

  3. As a snack — Quick to make whenever a craving hits.

  4. As a party appetizer — Cut into smaller pieces for easy bites.

  5. With an egg on top — Add a soft-boiled or fried egg for a heartier breakfast.

Storage

This is really meant to be made and eaten right away, since the toast needs to stay crisp. The marinated cucumbers can be made a few hours ahead and kept refrigerated, though they'll continue to soften over time. Assemble just before eating.

Swaps and Substitutions

  • Cream cheese: Whipped feta or ricotta both work well in its place.

  • Chili crunch: Any chili oil or hot sauce you like can be substituted.

  • Vinegar: Rice vinegar works in place of white wine vinegar.

  • Bread: Any sturdy bread works well — sourdough or a hearty multigrain are great choices.
